Material :
2 tilapia fish
8 cloves shallot, puree
6 cloves of garlic, puree
2 cm turmeric, puree
2 cm ginger + 2 hazelnut, puree
1 ounce of ground ground chili + 1 ½ teaspoon coriander
1 sheet of turmeric leaves
3 bay leaves
1 piece of lemongrass
1 piece of galangal (laos)
600 cc thick coconut milk
Salt + flavoring + sugar to taste
How to make :
- Sauté the ground ground chili along with the finely grounded spices.
- Enter turmeric leaves, bay leaves, lemongrass, and galangal.
- Then add salt, flavoring, sugar and coconut milk.
- Enter the fish but only cooked briefly.
- Lift the fish and place it in a temporary container.
- Cook all the spices until thick and somewhat oily.
- Place Baking Paper Seven as a teflon mat, then place the fish on top and apply the seasoning while baking over medium low heat. If you have baked enough behind the fish then rub the other side of the fish again.
- After the fish is cooked, serve with the remaining seasoning that has been thickened earlier.
